Chicken and Caesar Salad

Did you know that Romaine Lettuce is nutrient rich and loaded with vitamins A, C, K, Folate and more? Romaine is so versatile and can be served with a variety of entrees, my favorite being Blackened Salmon. Here’s a quick and delicious recipe for Caesar Salad.

Caesar Salad 

Ingredients: (serves 4)

1/2 cup extra virgin olive oil (EVOO)
1/4 cup rice wine vinegar or freshly squeezed lemon juice
1 tsp Dijon Mustard
2 garlic clove crushed
1/2 tsp dried oregano
1/2 tsp freshly ground black pepper
1/2 tsp dried basil
1/2 tsp sea salt (optional)
1/3 cup fat free or low fat grated parmesan cheese
1 head romaine torn into bite size pieces

Directions:
Place all the above ingredients in a medium bowl and whisk until combined. Store in a glass jar or glass container for salad dressing. The dressing can be kept in the frig for up to 2 days.  Be sure to shake well before using.  Drizzle over romaine or your favorite salad mix.

If you would like to add a little variety to your salad, toss in 1/4 cup each fresh, finely chopped chives, cilantro and red onion.
