What exactly makes this a power quiche? The egg, egg whites and vegetables make this little dish a powerhouse of lean protein and complex carbohydrates which equals power in my book. As a matter of fact, I often eat this dish just prior to a heavy duty strength training workout. It’s also perfect when time is a factor but you still want a nutritious clean eating meal. Also, this is a meal in one which makes my life a whole lot easier–not to mention it takes less than ten minutes to prepare. Keep in mind this quiche does not have a crust but I promise you won’t even miss it. It’s pure yum!!!
Ingredients: (2-4 servings)
1 cup Baby Spinach (organic preferably)
1 cup chopped Broccoli Florets
1 T diced Red Pepper
1 clove garlic
1 T EVOO (extra virgin olive oil)
1 tsp dried oregano
pinch sea salt
1/4 tsp freshly ground black pepper
1 whole egg
3 egg whites
1 ½ T chunky salsa, mild (no sugar added)
1/4 cup shredded low fat mozzarella cheese (optional)
Sauté veggies in EVOO just until tender, add garlic and sauté about one more minute. Whisk egg with egg whites and add the remaining ingredients—whisk until combined. Pour sautéed veggies in a small casserole dish (spray bottom with EVOO or canola cooking spray), cover with egg mixture and bake in a 375 degree over for approximately 18-20 minutes…or until egg is cooked and no longer runny. Let set for 5-10 minutes before cutting into servings. Prep time approximately 10 minutes. Enjoy!
