1 tbsp extra virgin olive oil for sautéing
1 cup chicken broth (reduced sodium, fat free)

1/2 tsp black pepper
1 tbsp hot sauce (Frank’s has a no added sugar sauce)
1 (14.5 oz.) can diced petit tomatoes with juice (all natural)
1 cup or 8 oz. can all natural tomato sauce (no salt added)
Directions:
Preheat oven to 375 degrees. *Heat extra virgin olive oil in skillet, add chopped onion and bell pepper and sauté for 2-3 minutes then add brown rice. Continue to sauté for another 2-3 minutes. In large casserole dish add chicken broth, salt, black pepper, hot sauce, diced tomatoes, cheyenne pepper, sautéed onion, bell pepper and brown rice. Stir to incorporate. Cover with a lid or foil and bake approximately 45 minutes or until rice is tender and has absorbed most of the liquid.
