Spinach Strawberry Salad

This is one of the most refreshing salads I’ve had in very a long time.  I love that it’s not loaded down with croutons, cheese and heavy dressing. It seems that food is always synonymous with some event and this particular one just happens to remind me of a lazy Saturday afternoon picnic on the beach.

Spinach & Strawberry Salad


  Ingredients:

5 cups baby spinach (organic)
2 cups sliced strawberries
1 small red onion
1/4 cup slivered almonds
1/3 cup extra virgin olive oil (EVOO)
1/3 balsamic vinegar
1/3 cup freshly squeezed orange juice
2 tsp Dijon mustard
2 tbsp sesame seeds
1 tbsp poppy seeds

Directions:  Rinse and slice strawberries into halves…pat dry with a paper towel. Slice onion thinly and separate into rings. In a small mixing bowl whisk together EVOO, balsamic, orange juice, Dijon, sesame seeds, and poppy seeds.  Place spinach, strawberries, almonds, onion in a large salad bowl and toss lightly.  Pour EVOO  mixture over salad and toss to coat.
