Turkey Meatloaf

When I think of growing up and family dinners meatloaf often comes to mind. My mom made meatloaf at least every other week and we never seem to tire of its comforting qualities.  Mashed potatoes, meatloaf, country green beans, biscuits and sweet tea were usually what adorned our table on many Sunday afternoons.  Those were the days when the entire family sat down at the table together and talked over the events of the day.  I miss those days!

Cooking on a nightly basis isn’t something a lot families do anymore with their busy lifestyles. I love the idea of getting the entire family involved in cooking dinner together,  setting the table, eating & talking and cleaning the kitchen.  Am I living on another planet?  No, I’m just all about family and recreating memories that will last a lifetime.  Also, by cooking at home we save a ton of money and know exactly what goes into our food and ultimately our bodies.

Meatloaf cooked with lean ground beef is fine, but I love turkey loaf just as much, if not more than the traditional kind.  So tonight for dinner, think about preparing my turkey meatloaf as a family, set down together and create your own memories– ones that will last a lifetime! 

Turkey Meatloaf

                                                     

Ingredients: (serves 4)

1 lb lean ground turkey
1/2 cup diced onion
1/4 cup diced red or green bell pepper (optional)
1/3 cup old fashioned oats
1/3 cup tomato juice (low sodium)
1 lg egg (egg white alone will work just as well)
1/2 tsp freshly ground black pepper
1/2 tsp sea salt
1/2 tsp cayenne pepper
1 tsp oregano
1 tbsp ketchup

 

Directions:  preheat oven to 400 degrees.

In a medium mixing bowl combine all the above ingredients and mix until incorporated. Spray a standard loaf pan with canola or extra virgin olive oil spray and add the turkey mixture.  Shape turkey into a loaf brush the top with 1-2 tbsp ketchup and bake for approximately 40-45 minutes.
